Paneer Kulcha is a delightful Indian flatbread stuffed with spiced paneer (cottage cheese), onions, and aromatic spices. Perfect for breakfast, brunch, or dinner — crispy on the outside, soft and flavorful inside.

Ingredients

  • Group 1: For the Paneer Filling
  • 2 tablespoons butter

  • 1 onion, thinly sliced

  • 1 capsicum (green bell pepper), finely chopped

  • 1 teaspoon ginger-garlic paste

  • 1/2 teaspoon salt (adjust to taste)

  • 1/2 teaspoon red chili powder

  • 1/4 teaspoon turmeric powder

  • 1/4 teaspoon black pepper

  • 1/2 teaspoon amchur (dry mango powder)

  • 1/2 teaspoon chaat masala

  • 1 cup crumbled paneer (cottage cheese)

  • 2 tablespoons fresh coriander leaves, finely chopped

  • Group 2: For Assembling and Cooking
  • 4 Kulchas (Indian flatbreads)

  • 2 tablespoons green chutney

  • 2 tablespoons garlic chutney or red chili sauce

  • Butter for cooking

Directions

  • Group 1: Preparing the Paneer Filling
  • Heat a pan over medium heat and add 2 tablespoons of butter. Allow it to melt.
  • Add thinly sliced onions and finely chopped capsicum to the pan. Sauté until tender and slightly caramelized.
  • Add ginger-garlic paste and sauté for a minute until the raw aroma disappears.
  • Season with salt, red chili powder, turmeric powder, black pepper, amchur, and chaat masala. Stir well.
  • Add crumbled paneer. Mix with the spice-infused onion and capsicum mixture. Cook for a few minutes until paneer absorbs the flavors.
  • Toss in finely chopped fresh coriander leaves and give a final mix. Sauté for 2 more minutes. Your paneer filling is ready.
  • Group 2: Assembling and Cooking the Kulcha
  • Take two kulchas. Spread green chutney on one, and garlic chutney or red chili sauce on the other.
  • Spoon the prepared paneer filling onto one of the kulchas, spreading it evenly.
  • Place the other kulcha (with sauce) on top, creating a sandwich.
  • In a pan, melt a little butter over medium heat. Place the stuffed kulcha sandwich in the pan.
  • Cook with butter, flipping occasionally, until both sides turn golden brown and crispy.
  • Once golden and crisp, remove from the pan.
  • Slice into halves or quarters as desired.
  • Serve hot and enjoy.

Notes

  • Use fresh, soft paneer. If your paneer is dry, soak in warm water for a few minutes before crumbling.
  • Don’t overfill — too much filling makes the kulcha hard to seal and may burst while cooking.

  • Cook on medium-high heat. Low heat makes kulchas hard, high heat burns them.

  • Apply butter or ghee while cooking for flavor and a golden crust.

  • Flip gently with a flat spatula so the filling doesn’t fall out.

  • Customize the filling with extra veggies, herbs, or spices.

  • Serves well with yogurt, mint chutney, pickle, or a simple salad.
