Ingredients
– 1 cup ripe mango pulp
– 2 tbsp sugar
– 1/4 tsp lemon juice
– 1/2 tsp ghee (clarified butter)
Directions
- In a blender, take 1 cup of ripe mango pulp and blend it until it becomes a smooth paste without adding any water.
- Transfer the mango puree to a strainer and strain to get a smooth silky pulp.
- Take a pan and add the strained mango pulp along with 2 tbsp of sugar. Cook on medium flame, stirring continuously, until it thickens well.
- Once the mixture thickens, add 1/4 tsp of lemon juice and mix well.
- Brush 1/2 tsp of ghee on a steel plate to prevent sticking.
- Transfer the cooked mango pulp onto the greased plate and spread it uniformly using a spatula.
- Place the plate in direct sunlight for 2 days or until the Aam Papad turns translucent and sets.
- After drying, scrape the sides using a knife and gently peel off the Aam Papad from the plate.
- Cut the Aam Papad into desired shapes and roll them up for easy storage and serving.
Notes
- Use ripe and sweet mangoes for the best flavor.
- Stir the mixture continuously while cooking to prevent burning.
- Grease the plate well before spreading the mango pulp to avoid sticking.
